MINT PULAO
Ingredients
Basmati rice 2 cups(soak them in water for about 30 minutes)
pudina 1medium bunch
chillies 5
cinnamon 1 small stick
bay leaf 3 leaves
cloves 2(could add more if u want)
ginger garlic paste 2-3tbsp
onions 1 large one
salt to taste
oil 3tbsp
cumin seeds 2tsp
fennel seeds 2tsp
coriander powder 2tsp
mace 2
coriander leaves 1 small bunch
Preparation
1.Add oil to pan.Once it is hot add chilies,cumin.Add coriander leaves.Saute it for about a minute.
2.Add mint leaves to the pan and turn off the flame.
3.Grind all the above
4.Heat pan with remaining oil add cinnamon,cloves,onions.
5.Once onions are fried add ginger garlic paste.saute it for a minute.
6.Add mint paste.Saute it for about two minutes.
7.Mix this paste with basmati rice.
8.Add fennel seeds,mace,bay leaf,enough salt to the rice.
9.Add around 5 cups of water.
Mint rice is ready.Serve with raitha.
