Samosas


Ingredients

1 cup  all purpose flour
1 cup  wheat flour
oil   2tbsp
salt
water

Glue Mix
Mix All purpose flour (Maida) and water to make it like thick paste which works like glue.

Preparation


1.Mix allpurpose flour,wheat flour,salt and oil in a bowl.




2.knead the dough to a very soft consistency by adding water.keep it aside with lid on it for 1 hour




3.After 1 hour take a small ball from the dough,spread some all purpose flour all over the rollling pad
and

 4.using rolling pin press it to a thin round shaped one(like tortilla or chapathi).




5.Try to roll it to as thin as possible,that is when u get crispy samosa.




6.cut it into a square  by trimming  all the edges..




7.cut it in along the center to form 2 rectangle shaped strips


8.heat pan.


9.take each strip and put it on the pan for 2sec on one side and 2 secs on the other not more than 5 seconds.


10.This process makes it easier to handle thin strips while stuffing.If you keep it for more than 5 secs then the dough gets cooked on the pan itself and it will tear up easily and also you don't get nice crispy texture for your samosas while deep frying in the oil.


11.To the egdes apply the glue mix.

12.Fold the edges to the center

fold the eges to the center.











put the stuffing in and close the bottom edges.
Deep fry them in the oil



For stuffing  use potatoe curry,that tastes good.You could use any kind of curry.
