Mysore Bonda


Fluffy and Perfect Bonda

Ingredients

1 cup maida
1/4 cup rice flour
salt
1tbsp very finely chopped onions
1tbsp very finely chopped ginger
1 tsp cumin seeds
butter milk
Baking soda  1-2 tsp

preparation

1.Add salt and rice flour to maida.
2.Add little by little buttermilk to make it like sticky dough (exactly like vada dough,wet your hand take small portion of dough roll it into round shape and drop it in oil,if dough becomes thinner than vada mix no problem as long as you can drop them in oil with your hand)
3.Soak above dough overnight.
4.Next morning add baking soda,onions,ginger,chillies,cumin seeds.
5.Ferment it for a minimum of one hour or you should see the dough raised to double of its amount.That is when you get fluffy bonda.
6.Heat oil (should not be too hot)
7.Drop them using your hand into oil.Fry them until golden brown.


***Fluffy idli,dosa,bonda.............is possible with fermented dough only.When dough is raised to double (or more)that is the indication of fermentation.
