Egg Palak or Anda Palak

spinach
eggs
tomato
egg masala or chicken masala
coriander leaves
onions
ginger garlic paste
salt
turmeric powder
chilli powder

Preparation

1.Heat pan.Add oil
2.Add cumin,mustards seeds
3.Add onions until they are transculent
4.Add ginger garlic paste,saute it until raw small goes off.
5.Add turmeric,chilli powder,egg masala powder,saute it for a while.
6.Add spinach leaves and the keep the lid on.cook until they are very soft.
7.Add tomatoes,keep the lid on cook it until they are mashed up.
8.Don't make the dish dry as we want some gravy which is the blend of both spinach and tomatoe juices.
9.Whisk eggs in a bowl with little bit salt.
10.pour in the above mixture on top of the curry.let it cook for a while without mixing it.
11.Once the egg mixture gets thick mix it well with spinach in such a way that you can see some little
chunks of egg.
