Vanakaya Mamidi Kaya Kura

This is simple and delicious curry.


Ingredients

2 cups chopped eggplant
1 cup chopped mango (quantity depends on the sourness of mango sometimes)
coriander leaves
3/4th cup onions
2 green chillies
salt
turmeric powder
chilli powder
Tempering
 1 tsp mustard seeds
1 tsp cumin seeds
2 dried red chillies
1 tsp urad daal
crushed garlic(optional)
curry leaves
3-4 tbsp oil


Preparation

1.Heat oil in a pan,add mustard seeds,cumin seeds,dried chillies,urad daal when oil is hot.Add curry leaves.
2.Add eggplant pieces,saute it until is 70%done.Remove them.
3.Add onions,saute them until they are translucent.Add mango pieces.cook with lid for couple of minutes until mango pieces are soft.
4.Add eggplant pieces to the pan.cook it until done for about 5-8minutes.Add chilli powder,saute it.Add coriander leaves.

** you can cook all (mango pieces,eggplant pieces,onions)at once too.I want my eggplant pieces to be fried in the oil well.
