Thotakura Pulusu (curry with Amaranth leaves)

Add 1 big bunch of leaves,2 tomatoes,3 chillies,2tsp chilli powder,2tsp turmeric powder
salt,small amount of tamarind (1/2 inch to 1 inch so that the curry is sour enough to your taste),little bit of cumin powder(optional).
Cook them using pressure cooker
Heat pan for Tempering
Add Dry red chillies.add 2 crushed garlic cloves,cumin seeds,mustard seeds,urad dal,onions,curry leaves.
Add the cooked mixture to this tempering.
Serve it with rice,chapathi etc..



Another variation would be with just tamarind(1inch to 2 inch) without tomatoes.This tastes even better.
