Simple potato egg plant curry


                                                              Potato Eggplant curry
Ingredients

Potato 2
eggplant  2
coriander leaves
ginger  7pieces
chillis   8chillies
onion  1(big onion)
salt to taste
oil to fry


Preparation

1.Add 2tbsp oil to pan.
2.Add chopped potatoes.(I love to have medium chunks of potato in curry not small)Take out them once they are 70%done.
3.Add eggplant fry till 70% done.Take out them.
4.Add cumin seeds,mustard seeds,curry leaves.
5.Add chopped onion fry for about a minute
6.Add fried potato,fried eggplant and add gingerchili paste,salt,turmeric powder.
7.Fry them they are completely done.


You can try this recipe with some other vegeteables too.
